What makes a good margarita? Is it primarily a vehicle for tequila, to maximize the intake vs. alcohol effect ratio? At Geronimo, the margarita is taken very seriously. Geronimo's Robert Bolduc says, “We knew that there were very few places in the Northeast where you can find a really good, freshly-made margarita, and we decided it was time.” Chief Financial Officer Elin Pistey adds, “We knew New Haven would be a good place for this.” Geronimo’s classic margarita is made with freshly-squeezed lime juice, top-shelf tequila and agave nectar (a sweetener made from the agave plant, the same type of plant used to make tequila). As Bolduc puts it, Geronimo’s margaritas are free of “sour mixes and other junk.” And if you'd like to learn more about tequila, Geronimo offers monthly “Tequila 101” classes. “Different tequila reps come in and go through different types of tequila. You drink for free and learn about it,” Bolduc says. The tequila is paired with a selection of foods prepared by chef Tim Scott. Chances are you’ll be able to find a style of tequila that you like, considering Geronimo serves more than 160 varieties of tequila.
