The secret to great Spanish cooking is simplicity: highlight the freshest ingredients possible and don’t hide them in sauces. "A lot of our cuisine is simple and to the point," says chef Javier Feijoo. "Our concept is the classical cuisine of Spain, plus taking some of the classical dishes and putting on a modern twist." The modern stuff, he says, adds the influence of French and Northern Italian cuisine. "It’s all about fusion. Knowing how to fuse is the ultimate goal."
