The partners behind Salute know that the competition for Best New Restaurant is stiff, so they’re psyched to receive the honor. Jimmy Cosgrove, a managing partner, has over 30 years experience in the restaurant business in downtown Hartford, and he and his team want to make the city hop. They offer discounts for downtown residents. "Our goal is to keep the people that live downtown eating dinner downtown," says Cosgrove. The staff also brags that the kitchen is open and running later than just about anyplace else. "If there’s a body in the restaurant we’ll try to feed you," says Cosgrove. Beyond that, the concept is fairly simple: traditional Italian-ish favorites done well and priced affordably.
