“Boston Mike,” who heads up at the bar at Max Downtown, is justifiably proud of his whimsical mixology menu, which changes to fit both the seasons and his mood. The Cranberry Project has just a touch of molecular gastronomy in the Versa Whip foam topping – a tasteless component which can be blended with 16 ounces of any fluid to create a textural topping to the beverage. The foam on this cocktail contains the same flavor components as the body: namely a marriage of tart cranberry and tarragon sitting atop a creamy bed of rum with just a hint of sweetness from a splash of St. Germaine. As a member of the spring cocktail line up, this beverage will debut in March and be available for a limited time. But due to the consistency of muddled flavors and the multiple ‘beverage diaries’ scattered behind the bar, a quirky, quality cocktail is pretty much guaranteed year round.
