General Manager Jared insists he's "not one for puns" but the cheeky name of RePUBlic certainly fits with the vibe of this upscale gastro joint- the newest addition to the Mill Restaurant Group's family. With a conceptual menu that puts new spins on classic favorites- cheesecake lollipops anyone? - Republic isn't the type of place that is content with googling a bunch of typical drink recipes and slapping a happy hour menu together. No, these drinks are crafted in house from home brewed recipes by folks who care about food and flavor combinations. This attention to detail is self evident in Cortez the Killer, which combines a hibiscus infused tequila with rosemary for a fragrant, aromatic, and not too sweet drink experience. The unusual flavors and martini glass presentation prevent this from being a true margarita, but you won't care once your taste buds adapt to the combination of smooth pear, bitter herbs, and top shelf tequila. This is a culinary adventure in a glass, and an excellent indication of the shape of things to come for this new Bloomfield hotspot.
