How did you both get started?
We are two of the seven grandchildren of Frank Pepe. We’ve been involved in the business from a young age. Gary has been the “main pie man” for a very long time.
What are the origins of Frank Pepe?
He is from Maori – south of Naples. The pizza is very much “Napoli style.”
How much has the menu changed over the years?
Only a very, very small amount. A fraction of the menu items are new. And all the changes happened after “Pepe time-“ which was an eighty year span. Over the past eight years, we’ve introduced some minor tweaks.
What makes a good pizza?
Top quality ingredients... following our grandparents traditions and using quality, imported ingredients.
Some people believe that the original New Haven location has the best pizza. Thoughts?
Well, it has some validity – the oven has had a long time to age. But with the other locations – it’s only a matter of time. The atmosphere in New Haven is great as well – many employees have been there for twenty-five years and everyone knows each other. Also, though, we’ve noticed that quite a few folks swear their local location is the absolute best. So it all depends.
You have a new location opening this summer right?
Yes! We will be launching the next Pepe’s in West Hartford very soon.*
What about the next generation after you? Is there any interest?
Absolutely. We can only hope that the family tradition continues for a very long time. It’s one of the joys of working here.
*The new Pepe's location in West Hartford is scheduled to open by the end of September.
