Roast chicken is a basic dish, but serious chefs can get really worked up over its rustic charms. Like artists practicing their figure sketches or jazz musicians riffing on the blues, it's rudimentary and maybe even simple, but to do roast chicken well can demonstrate a kind of culinary mastery.
