What was your earliest ambition?

I had a desire to be an attorney.

College or straight into work?

Both. I went to college and I went straight into work.

What got you interested in cooking?

Since my teenage years I had to learn to cook for myself. I didn't want to just cook anything I wanted to cook things that were well balanced and nutritional.

From Turkey to Connecticut. How did that happen?

I attended boarding school in Atlanta. The rest is history.

Talk me through how you came to open Zula?

I have an unquenchable thirst for exquisite taste and exceptional service. I opened Zula to answer the call in Hartford for a nice, sexy and sophisticated atmosphere. Zula in the Turkish tradition means "a cache hiding place." I believe that people want to be seen but under the radar.

Who is your mentor?

My father has been my mentor and greatest inspiration. While he is no longer with us in the flesh his guidance and example of excellence is something I strive everyday to emulate. He taught me how to work hard everyday to enrich the lives of other people and contribute in all ways possible to being in service to those less fortunate then myself.

What's your food philosophy and how has it evolved?

My philosophy is that food is something one should experience with all five senses. Above all, the ability to taste is our specialty at Zula.

How does the Hartford customer differ from other cities in which you've cooked?

The Hartford customer differs from other cities that I've cooked because they truly enjoy atmosphere. They are like family because everyone who dines in downtown is a savvy diner, they are also exceptional food critics. I value their opinions and often incorporate their recommendation immediately.

Most overrated?

Miami club and bar scene.

Most underrated?

Hartford's Pratt.

What makes you laugh?

The last two questions. I opened Zula to be "Your alternative to gossip." We smile at being the most overrated to some and cherish being the most underrated to most.

What's your food weakness?

I like to eat everything.

If your 20-year-old self could see you now, what would he say?

Stay the course. Your best is yet to come. I'm so proud of you.
