There's an Italian proverb of which Francesco d'Amuri is very fond. So fond, in fact, that it can be found on the website of his restaurant, l'Orcio. The proverb? “Troppe salse vivande false,” or, “too many sauces, insincere food.” D'Amuri's committed to creating simple Italian dishes that reflect the rich culinary histories of Italy's many regions. Whether it's house made pasta with a wild boar ragu, or oven-roasted sea bass, Francesco d'Amuri brings his native Italian training (he began his career in the northern resort town of Rimini while still a teenager) to the table, creating thoughtful, contemporary fare.
