The fast-casual style of Americanized Mexican food epitomized by 1,200-location-strong Chipotle Mexican Grill chain has been subjected to sneers from foodies, Mexican natives and (of course) hipsters, but the truth is that a dish like a burrito doesn’t have to be highly authentic; it only has to be highly awesome, and if we do say so ourselves the los estados unidos version, packed with rice, cheese, grilled peppers, guacamole, salsa and sour cream, is better than the austere Mexican version with only meat and beans. (That’s right; we said it!) The rapid growth of Chipotle, founded in 1993, shows that it does American-style burritos right, and the company’s dedication to fresh, humanely raised ingredients isn’t just feel-good corporate talk. It’s been startlingly specific with its procedures, serving 75 million pounds of hormone-free, naturally raised meat in 2010 and getting 50 percent of its meat from small and mid-sized farms. So there is no reason to feel guilty for biting into one of these suckers.
