Fritz Knipschildt is first and foremost a chocolatier, but with his shop Chocopologie, he’s got a place where plated desserts are made and served directly to the customer using his chocolates as their featured ingredients. He offers many options, including American classics like the banana split, but with a twist: The banana is breaded in coconut and fried, served with a caramel sauce. There’s a chocolate mousse pyramid topped with sea salt. And a brownie sundae with crumbled bacon. Yes, bacon. “People just love it,” says Knipschildt. “We have four pastry chefs only doing desserts. Everything is made there. We make so many things that we sell wholesale that we can use now at the café. We have eight or nine dessert sauces and syrups that we can use and incorporate into our desserts. We’re always looking for the best ingredients from around the world.” After seven years of business at the SoNo shop, things couldn’t be going better. “We’re a team of super passionate people,” says Knipschildt. “This makes me so happy, to win this.
