What's a good Irish cocktail that you make?
I invented a shot called an Irish flag. It's a three-layer shot with the bottom being creme de menthe, green in color, followed by Bailey's Irish Cream and topped off with brandy, which makes it tricolored. The Irish flag represents unity. Green stands for Ireland, white stands for peace and orange represents England.

How is the bar scene in Glastonbury?
Just in the last month, this area has grown and business keep getting better. This particular area of Glastonbury is now an epicenter for social nightlife. All of the bars and restaurants — Plan B, Rooftop 120, Bricco — offer something different so we feed off of each other well. We usually start with an older crowd, then happy hour happens and the crowd gets a little more diverse. After 10 p.m. it gets busier and busier.

Do you get offended if someone orders an Irish car bomb or a black and tan?
No, I don't get offended. However, if you asked for either of these in Ireland you'd be beaten. Car bombs have a very negative connotation. A black and tan was an English prisoner or mercenary sent to murder the Irish people. These are made-up American drinks.
