Tell me about your garnishes.
We wanted to go above and beyond. Garnishes finish off a drink and adds to the presentation. We have a dehydrated lime coconut chip, watermelon chips for the watermelon caprihina and a dried apple, blackberry wasabi chip for our apple blackberry pisco fizz. These garnishes are made by 'Dress the Drink', based out of Las Vegas. Our cocktails aren't just drinks anymore, they are something exciting that not only appeals to the eye but adds to the taste.
What do people do to get free drinks?
It's a pretty mild-mannered bar, but I did have a young guy who didn't have any money offer to be the entertainment. He took his shirt off ran through the restaurant and down the road. He was charming and many people offered to pay for his drinks that night.
What are you doing with pisco?
Pisco is an acquired taste. Nobody orders it straight up so we wanted people to try it and enjoy it. We make a drink called an Apple Blackberry Pisco Fizz. We pair a Pisco with our homemade blackberry vanilla simple syrup, lime juice, a splash of egg whites to make it frothy and top it with sparkling apple cider. This drink accentuates the pisco flavor.
