What qualities do you think a successful bartender should have?
Number one should be patience because sometimes you have to deal with difficult people and you want them to be happy and come back. Multi-tasking is important because that's 90 percent of what bartenders do; taking multiple orders, remembering them and carrying on conversations with multiple parties is essential. I also believe one must be confident, especially when you have to cut someone off.
If these walls could talk what would they say?
They would say, What the fuck! There is just so much random shit that goes on here. These walls have witnessed the dramatic transformation on Tuesday night, when we turn into a dance club. These walls see a certain person who comes in four times a week with a different date each time and essentially never having to pay for drinks.
Where is the cocktail scene headed?
I think it's moving towards a more kitchen-style approach. Infusion cocktails are on the rise. Savory infusions with herbs -- which we do have here -- are getting popular. I also think gin is going to make a comeback.
What cocktails are you making for spring?
I've recently infused watermelon and tequila and it's really good. It surprisingly has a great balance and is smooth. We are still playing around with it. We are also working with our chef on a Thai, chili-coconut cocktail.
